Carrie on Vegan sent out a delicious hummus recipe that we recreated for a party recently, and it was a runaway hit.
Ingredients:
1.5 can or equivalent cooked chickpeas
1 large bulb of roasted garlic
1 lemon
2 Tablespoons tahini
A couple of shakes of cayenne pepper
Seasonings (dash of salt - optional, black pepper, garlic powder, etc)
Add chickpeas, garlic, and tahini to a food processor. Squeeze the juice on one lemon, add seasonings, and process until blended.
There's also a roasted red pepper hummus in this shot, to the left side. It's a similar recipe but with 1 large red bell pepper, roasted with seeds & skin removed after cooking, less lemon juice, about half a lemon, and with a dash of cayenne added. Some recipes sub olive oil for the tahini but in my opinion it loses something flavor-wise and health-wise when you do this.
